Icebox Cookie Cake & New Ways to Party Outdoors

Our Icebox Cookie Cake is fresh and cold – it’s oh-so perfect for warm weather entertaining.  Add some blueberries and strawberries to it for a red, white and blue sweet treat on July 4!

Icebox Cookie Cake

MAKES 16 servings .

Ingredients:

· 1 box DCD Baking Mix

· 1 stick of butter, softened & 2 eggs for baking mix

· 2 cups heavy cream

· 1 cup mascarpone cheese, room temperature

· 2 packets DCD Frosty White Chocolate Smoothie Mix

· DCD Merlot Fudge Sauce or DCD Raspberry Dessert Sauce, for garnish (optional)

Tools:

· DCD Offset Spatula

· DCD Parchment Sheets

Directions:

1. Preheat oven to 350°F. Line baking sheet with parchment sheet.

2. Prepare baking mix as directed on box for cupcakes.

3. Spoon level tablespoons of batter 2 inches apart onto lined baking sheet, bake for 10-11 minutes. Repeat with remaining batter, for approximately 54-56 small round cookies. Set aside.

4. In a medium bowl, beat cream and smoothie mix with electric mixer on high speed until soft

peaks are formed; approximately 2-4 minutes. Then gently fold in mascarpone, with spatula.

5. Spread 1¼ cups cream mixture on bottom of springform pan and cover with 16-18 cookies.

(9-10-inch round cake pan, lined with parchment may be substituted for springform pan)

6. Repeat step 5 to create another layer. Then spread remaining cream mixture on top and

smooth with spatula.

7. Crush remaining cookies into fine crumbs using food processor or rolling pin. Sprinkle over top

of cake.

8. Cover pan with foil and freeze until firm; approximately 2-3 hours.

9. Transfer from freezer to refrigerator and chill for 6 hours.

Set up a smoothie bar with and without alcohol. Taste test to find your favorite flavors.
Petite Desserts. Make them all bite-sized. No need to choose just one!
Dilution solution. Pour a bag of ice into an attractive colander and set it into a large decorative bowl. The water drips into the bowl, the ice stays in the colander, ready to chill.
